A Summer of Pancakes: Vietnamese Rice Crepes and Two Scallion Pancakes

This class is part of our A Summer of Pancakes series

Vietnamese bánh xèo is a turmeric-colored, vegan-friendly rice-flour crêpe that can be filled with mint, basil, and meats and vegetables of your choosing. We'll also create a sweet-and-sour sauce to pair it with.

Where would we be without the ever-popular Chinese scallion pancake? We'll cook some up that will blow your corner Chinese joint away! We're cheating a little bit since they're made from a dough, not a batter, but we won't let that stop us.

We'll also visit the Korean version of scallion pancakes - pajeon - a batter-y, long-scallion-y pancake with a delightfully complex soy-based dipping sauce.

Note: This will be a hands-on cooking class, and is vegan and vegetarian friendly

Soma was born in the South, is what someone from the North would say. He co-founded the Brainery, is the sciencey half of Masters of Social Gastronomy, and plans on getting married to Waffle House. In his more droll moments he is a tragic sellout to higher ed as a professor of data journalism at Columbia University's journalism school.
